  • 250g

  • 1 tsp

  • Icing Sugar for rolling or you can use caster sugar

Ground Almonds
Caster Sugar
Egg whites (approx. 3 large eggs) Almond Extract


  1. Line two baking trays with baking paper

  2. Preheat the oven to 160C

  3. Mix together ground almonds and caster sugar so they are completely combined.

  4. In a gleamingly clean bowl whisk the egg whites to soft peak stage.

  5. Fold in almond mixture and almond extract.

  6. Take walnut size balls of mixture and roll into balls, then rolling them in icing sugar. Place

    them on a prepared baking trays, 12 to a tray. Sieve over some more icing sugar.

  7. Bake in a preheated oven for 15 – 20 minutes until the outside is firm to the touch and the

    base is golden. The surface should have a pleasing cracked appearance.

  8. Remove from the oven and allow to cool completely on the baking trays.

  9. Store in an airtight container. They should stay fresh for 2 – 3 weeks.
